A new beverage director and director of operations recently joined the staff of Charleston, South Carolina’s Home Team BBQ.
New director of operations John Keevil hails from New York City, where he developed a love for cooking and the restaurant business. He began working in the hospitality sector as a college student, eventually working in an array of restaurants in San Francisco, California before launching his own bakery in upstate New York as well as two restaurants in the Central American nation of Belize.
After those adventures he returned to New York, where he worked alongside such noted chefs as Geoffrey Zakarian, Bobby Flay, Andrew Carmellini and Justin Smilie.
A trip to Charleston convinced Keevil to relocate, and he and his family have been there since November 2015 — just after he took the job at Home Team BBQ.
Home Team’s new beverage director, Adam Rothstein, is also from New York. He studied at New York University, during which time he held restaurant jobs and decided to make the culinary arts his career.
Eager to be promoted during a stint as a busboy, Rothstein delved into exploring and studying different wines. He eventually branched out, learning to mix cocktails and gaining knowledge about craft spirits. For 11 years he was a front house manager in a variety of New York-based cocktail bars and restaurants, am impressive list that includes such well-known eateries and pubs as Empellon Cocina, Il Buco Alimentari e Vineria and the Seamstress.
Rothstein began visiting Charleston regularly in 2012, relocating for good in December 2015 when he took the beverage director’s job at Home Team BBQ. In his new role he will be tasked with managing the restaurant group’s bar and beverage operations.
